Ottapam / Ottada / Rice Pancake


Ottappam is so fluffy, soft, light and tastes delicious. It is mostly served with chicken or mutton curry. You have to use the clay pan to make this, it won't turn out good when made in a non-stick pan.

Preparation time: 10 mins
Cooking time: 15 mins

Ingredients:

Rice flour- 1 cup
Egg- 1
Water as needed
Salt to taste

Procedure:

1. In a blender, grind the flour, salt and water together to a smooth paste.



2. Then add egg and blend it together.


3. Dont throw away the egg shell. Rub the pan with egg shell, rinse with water and use it.


4. The batter should have the right consistency. It shouldn't be too thick nor too thin.


5. Heat the clay pan over high heat. The clay pan has be heated well for making perfect ottappams. It wont come out well in low heat.

6. Pour a large spoonful of batter over the pan,using the back of the spoon spread the batter to thin round shape. You can see that holes are starting to form in the ottappam.

7. It will cook very fast, remove the ottappam using a spatula.


Soft and fluffy ottappams ready to be served with mutton or chicken curry!
