Coconut Rice / Thenga Choru


Coconut Rice is one of the traditional dish for muslims in our place (Kanyakumari). For a simple weekend recipe we usually adopt this. Guess what? You don't need to prepare any special curry for this rice. In our places people just eat this rice with thogayal. Even u can eat this with parppu curry/ dal gravy. Just give it a try

Preparation Time: 10 mins
Cooking Time: 20 mins

Ingredients:

Rice-  2 cups
Coconut- 1/2
Onion- 1 medium size
Green Chilli- 3
Fenugreek seeds- 1 tsp
Curry leaves- 1 spring
Giner garlic paste- 1 tbsp
Oil- 3 tbsp
Salt to taste

Procedure:

1. Take all your ingredients. Extract fresh coconut milk and keep aside.


2.  Soak rice for about 10 mins.


3. Heat 3 tbsp of oil in a pressure cooker , add fenugreek seeds and onion. Saute it till the raw smell leaves. Now add ginger garlic paste and saute well.

4. Add green chillis and curry leaves then give it a mix.


5. Add coconut milk and water. As i used regular cooking rice, including coconut milk take 2 cups of water measurement for 1 cup of rice. Allow it to boil.


6. Now add soaked rice and stir well.


7. Pressure cook for 3 whistles and simmer for 5 mins. Turn off the flame.


8. After the pressure got released, slowly open the cooker and mix the rice gently.


9. Flavorful coconut rice is ready


Serve hot..
