Carrot Poriyal / Carrot Stir Fry with Coconut

It is a simple and healthy dish. As we all know carrot is a healthy vegetable yet a colourful one too. This is a simple dry side dish made with carrot and grated coconut. It can be served as an excellent side dish with rice

Preparation time- 10 mins
Cooking time- 15 mins
Serving size- 3

Ingredients:

Carrot- 2  (large, peeled and grated)
Shallots- 10
Grated coconut- 2 tbsp
Green chilli- 1
Salt to taste

For tempering:

Oil- 1 tbsp
Mustard seed- . tsp
Dry red chilli- 1
Curry leaves


Procedure:

1. Take all your ingredients.



2. Heat a kadai and add ingredients for tempering one by one.



3. Add chopped shallots saute for a minute and then add the grated carrot.


4. Mix well and cook until the carrot is well cooked.



5. Once the carrot is cooked add the grated coconut. Mix it well and cook for another 2 minutes.



6. Serve with rice.
