Cream of Broccoli Soup


Broccoli is a great way to add iron into your diet and this soup is just the perfect way to include broccoli in your meals. This soup is creamy in texture but it contains very little actual cream

Preparation time: 15 mins
Cooking time: 30 mins

Ingredients:

Butter- 3 tbspn
Onion- 1 small
Garlic- 2 cloves
Broccoli- 1 cup
Maida- 2 tbspn
Salt to taste
Pepper to taste
Water- 2 cups
Milk- 1/2 cup

Procedure:

1. Heat butter in a deep pan,add the chopped onion and garlic and saute on a medium flame for few mins.



2. Add the broccoli and saute for few mins till raw smell leaves.  Add the water and cook covered till the broccoli is cooked and the water is dried. Add the flour and saute on a medium flame for few mins. Remove and keep aside to cool.

3. Blend it to a smooth puree. Keep reserved some broccoli florets for garnishing.


4. Pour this back into the same pan add more water as needed. Let it boil.

5.Add the milk and simmer for 5 minutes, while stirring continuously.

6. Season with salt and pepper.


7. Serve hot garnished with broccoli florets.


8. Flavorful broccoli soup is ready to eat.
