Dosa/Idly Batter using mixer grinder



We all presume its a difficult task to prepare dosa/idly batter in home. Therefore most of the homemakers prefer to buy such packed batters from supermarkets. While we all do Hallmark/916 quality check  for gold metals, we never bother to care  quality of our kick-starter of the day widely know as Dosa/Idly. In order to make your day healthier and easier, we have decided to post this recipe. Hope you Enjoy


Preparation Time:10 mins
Soaking Time: 6-8 hours

Ingredients:

Idly Rice- 2 cups
White Rice- 1 cup
Urad Dal (whole or split)-  Half cup
Fenugreek seeds- 2 ts. (optional, but its healthy and moreover it gives non-sticky crispy dosa)
Salt-To taste

Procedure:

1. Wash & soak the rice and lentil(with fenugreek seeds) separately.

2. Let it soak for about 6-8 hours.

3. First grind the rice to a smooth batter by adding required quantity of water(if coarse also no worries).Don't add too much water as it makes the batter watery. Pour the batter in a large bowl.

4. Now grind the urad dal separately to fluffy batter. Pour the urad batter above the rice batter(already prepared).Don't stir both batters now! 


5. Let both the batters(rice & urad-without stiring) in a same bowl to ferment for 3 hours. After 3hrs of fermentation now its time to stir them thoroughly.


6. Combine them with salt and allow it to ferment for 8 more hours.

Notes:
  1. Adding half tsp of baking soda to the idly batter makes soft idly.
  2. Adding very low quantity of water helps the batter to attain frothy(I used mixer for grinding,however using proper grinder gives better results)
  3. For making dosa add only little water so it can easily spread in tawa to give crunchy dosa.
