Aloo Palak / Potatoes in Spinach curry



Aloo Palak - A delicious rich & creamy gravy for Vegans. A versatile dish that helps the body to gain all healthy benefits. When Palak (Spinach) & Potato combine together it provides a tasty & colorful combo


Preparation Time: 10 mins
Cooking Time: 30 mins
Serving Suggestion: Chapathi, Roti, Butter naan.

Ingredients:

Palak(Spinach) - 1 (big bunch -Washed&cleaned)
Potato - 1 big (Boiled cubes)
Onion- 2 (chopped)
Tomato - 1 big (chopped)
Green Chilly -3 nos
Ginger Garlic Paste- 2 tsp
Coriander Powder- 1 tsp
Fennel Powder -1/2 tsp
Jeera Powder - 1/4 tsp
Kasoori Methi- 1 tsp
Sugar-1/4 tsp
Milk- 1/4 cup
Fresh Cream- 1 tbsp
Oil- 2 tsp
Whole Spices( Cinnamon-1 stick; Cardomon-3; Cloves-2)
Salt to taste

Procedure:

1. Prepare your ingredients. Wash throughly the palak.



2. In a hot pan, add the spinach leaves cook for about 5 mins or till it reduces its size. After cooking switch of the stove and allow to cool.



3. Heat oil in a pan, add the whole spices and fry for a minute. Then add chopped onion & sauté to attain translucent.


4. Now add ginger garlic paste and sauté for 2 mins. Add the tomatoes. Fry til it becomes mushy.


5. Next add the masala powders. mix a little.


6. Simultaneously, grind the palak to a fine puree with the green chilli.


7. Add the palak puree with little water and sugar and allow them to boil. Now add the potatoes.


8. Add salt and mix it well.


9. Cook in medium to slow flame. Now add milk and cook for 3 mins.


10. Garnish with ginger and thick fresh cream.
