Semiya Mutton Briyani / Vermicelli Mutton Biryani



Usually we make briyani with rice. This is a recipe where we use semiya instead of rice. You can make this recipe using mutton or chicken. I have used roasted semiya for this recipe. If you don't have that, then just add a tbsp of ghee in a pan and roast the semiya till the color turns light brown. If you have left over mutton curry then it is a very easy one to make. Ratio for semiya and water is 1:1.5. You can adjust the measures according to the amount of gravy  you use for cooking .

Serves: 4

Ingredients:

Semiya/Vermicelli- 3 cup roasted
Mutton Gravy- 2 cups approximately
Water- 2.5 cups
Onion- 1 sliced
Ginger Garlic paste- 1 tbsp
Coriander leaves- 1/4 cup chopped
Curd- 1/4 cup (optional)
Cardamom- 2
Clove- 2
Cinnamon- 1 inch piece
Coconut milk powder- 3 tbsp(optional)
Salt to taste
Curry masala powder- 2 tsp
Garam masala- 1 tsp
Ghee and oil for cooking

Ratio for semiya and water is 1:1.5

Procedure:

1. Prepare all your ingredients for cooking. I have used the left over mutton curry.


2. In a pan, heat ghee and oil. Then add the whole spices and ginger garlic paste. Slightly cook till you get a wonderful flavour of the ginger garlic paste.


3. Now, Add the sliced onion.


3. Saute till it turns translucent.


4. Pour the water required for cooking. Also add the coconut milk powder. If you don't have it, then add 1/4 cup of coconut milk. Please adjust the water proportion accordingly. Add the salt required to cook the semiya. Please note that there is already salt included in the mutton gravy. So add carefully.


5. Once the water boils, add the roasted semiya and mix it well. Reduce the flame to sim.


6. When the semiya is half cooked, then add the curd and mutton curry. Mix it well.


7. Check the taste and then add the spice powders. If your gravy has more spice then you can reduce the spice and salt accordingly.


8. Add the chopped coriander leaves. At this stage, the semiya should be 95% cooked. If there is no water then you can add less than 1/4 th cup of water.


9. Close with a lid. Reduce the flame to low and cook for 3 to 5 mins.


10. When the semiya is completely cooked, Add a tbsp of ghee and give it a mix.


Hot and Spicy Semiya briyani is ready. Curd raita is the best combination for this semiya.
