Beetroot Thoran


Beetroot is a power packed vegetable. Its health benefits are plenty. Intake of this veggie provides better stamina, improves the blood flow, good for skin and you name it..the list goes on. You can have beetroot as a juice for morning breakfast or have it as a soup..however you wish.. When you prepare beetroot soup, instead of discarding the boiled veggie, you can prepare a thoran out of it. This is a very simple to make thoran. Do try it. Preparation time:10 mins
Cooking time: 20 mins
Serves: 3

Ingredients:

Beetroot- 1
Green chilli- 1
Coconut- 1 tbsp
Red chilli powder- 1 tsp
Turmeric powder- 1/2 tsp
Salt to taste
Oil- 1 tbsp
Dry red chilli- 1 
Mustard seed- 1/2 tsp

Procedure:

1. Take all your ingredients.


2. Boil the beetroot pieces along with turmeric and salt until it gets cooked.




3. Drain the cooked beetroot and keep aside ( you can reserve this water for soup).


4. Add oil in a kadai, add mustard seeds, dry red chilli and curry leaves.


5. Add the boiled beetroot pieces and saute for a min.


6. Add coconut, red chilli powder and turmeric powder, mix well and cook for 5 mins in low flame.



7. Serve hot with rice.
