Fried Rice is the fashioned version of including veggies in your diet. Sometimes when you prepare variety of vegetable kootu in your lunch, kids wont even touch it. But when you prepare fried rice, they love it. You can include whatever veggies you wish or some pieces of fried chicken and it tastes awesome. The key to a successful fried rice is the perfectly cooked rice. When the rice is 3/4th cooked, take a rice and cut it into half. If you could see the raw white rice in the middle, then its not cooked. Wait for 1 minute and check again. Repeat this until the moment you could find no raw white rice. That is the right time to switch off the flame. If you want a perfectly prepared fried rice, Please do not over cook the rice.

Serves: 2 to 3
Ingredients:
Basmati Rice- 1.5 cup
Carrot- 1 ( chopped)
Beans- 7 ( chopped)
Peas- 1/4 cup
Capsicum- 1/4 cup chopped
Egg- 2
Butter or oil- 2 tbsp
Soy sauce- 2 tbsp
Pepper- 2 to 3 tsp
Salt to taste
Procedure:
1. Rinse the rice and soak it in water for 15 to 20 mins. Chop your veggies of your choice. I have used frozen peas. If you use the ordinary ones, then cook it separately and then mix with the other veggies.
2. Take two eggs in a bowl. Add salt to it and beat it.
3. In a kadai, add butter and pour in the egg. Add salt and 1 tsp pepper
and scramble it.
4. Once the eggs are scrambled, move aside the eggs and add in the veggies. If you want you can add a little more butter or oil. Saute for a minute.
5. Meanwhile, add salt to the rice while boiling and cook the rice as per the instructions said above. Add little oil while cooking the rice so that the rice doesn't stick to one another. Once done, drain the water.
6. Do not cook the veggies for more time. Sauteing the veggies for a minute is enough. Because we don't want the veggies to be so soft. Add little salt and pepper to the veggies.
7. Now add the cooked rice to the veggies. Add soy sauce and 2 tsp pepper to it and toss it well. If you are preparing with more rice, then add the cooked rice in batches and then add soy sauce and pepper to each batches separately.
8. Check for the salt and you can add if you need more. Keep the flame to medium.
9. Add some butter to it. Cover with a lid and cook for 2 to 3 minutes.
Its ready to be served.
