Unnakkaya / Stuffed Plantain Rolls - Guest Post

We are happy to share her recipe with you all.This is a famous appetizer in Malabar cuisine. Hope you all try this and send your feedbacks .


Preparation Time: 30 min
Cooking Time: 10 min
Serves: 6

Ingredients:

Plantain(Yetham Pazham or Nenthara Pazham- 2 (not too ripe and not too raw)


For making the stuffing:

Grated Coconut- 1 cup
Cashew nuts or Almonds- 1/4 cup chopped
Egg- 1(beaten)
Sugar- 2 tbsp
Ground Cardamom- 1/4 tsp
Ghee or Butter- 3 tbsp

Procedure:

1. In a non-stick cooking pan, heat 1 tbsp of ghee and fry cashew nuts and keep aside. In the same pan add 2 tbsp of ghee and to that add grated coconut and sugar.
2. Roast till coconut turns golden color and then add cardamom powder to the coconut.
3. Add egg to the roasted coconut and scramble the egg.
4. Now, add the fried cashew nuts to it and  mix everything well.
5. Stuffing is ready, allow it to cool down.



6.Take the plantain and peel off the skin. Remember that it should not be too ripe or too raw, it should be in the middle stage. Steam cook the plantain.
7. After it is cooked well remove from the steamer and let it cool down.
8. Cut the plantain length-wise into two halves and remove the black seeds from it.
9. Mash the plantain without any lumps and make into a soft dough.



10. Make small balls out of the dough.
11. Grease your palm with ghee and make the balls into disc shape.



12 .Place 1 tbsp of stuffing on the disc shaped plantain dough, since the dough is very soft, its very easy to paste them and make into an oval or round shape.



13. Deep fry the stuffed plantain in oil until it turns golden brown.




Serve it on a platter and enjoy the crunchy plantains with the sweet stuffing..




Note:
If the dough is watery add few tablespoon of rice flour to it and form a soft dough.
