Zucchini Noodles / Cheesy Chicken Zoodles


Want to try anything healthy and easy. Here it is.. Low carb zucchini pasta called "zoodles" Its a cool alternative to usual pasta. All you need is a spiralizer or julienne peeler to get a spaghetti-like noodles. Even if you dont own an one, you can thinly slice the zucchini length-wise and then julienne it. This recipe is delicious and surely you will experience a different taste from this zoodles. Give it a try ..

Preparation time: 20 mins
Cooking Time: 15 mins
Serves: 3

Ingredients:

Zucchini- 3
Onion- 1
Boneless chicken- 250 g
Egg- 3
Cheddar Cheese (grated)- 3 tbsp
Chili Powder- 2 tsp
Pepper Powder- 1 tsp
Turmeric Powder- 1/4 tsp
Soya Sauce- 1 tbsp
Chilli Sauce- 1 tbsp
All purpose sauce- 1 tbsp(optional)
Oil- 3 tbsp
Salt to taste

Procedure:

1. Using a peeler or spiralizer slice the zucchini into thin strips like spaghetti.


2. Heat oil in a skillet and after it is hot saute the chopped onions till the raw smell leaves.


3. Add the boneless chicken (cut into small cubes) and saute well. The chicken will get easily cooked after stirring for few minutes.



4. After the chicken is cooked well make a hole in the middle of the skillet and pour 3 eggs keeping the flame in low flame.



5. Now scramble the eggs and mix it along with other ingredients in the pan.Then add the spaghetti shaped zucchini noodles and mix well.


6. Cover and cook till the zucchini is 3/4 cooked. It will release water so after its 3/4 cooked open the lid and stir well. Add the masalas and sauces and mix gently.


7. Sprinkle the cheese over the pasta and cover with the lid for sometime so that the cheese melts.


8. Zucchini noodles is all cooked now. The noodles will be little watery because the zucchini keeps on releasing water when cooking.


9. Serve hot..
