Undampori / Sweet Bonda



A traditional mallu snack which occupy the first row in the display of mallu cafeterias in Kerala and GCC countries. The significant ingredients (jaggery, banana & cardamom) add real flavors to this snack and also will attract you to undampori fan club. Here we post the simple way to make your favorite snack in your home. Try and enjoy all the bites of undampori. All undampori fans please like, share and comment .

Preparation Time: 10 mins
Marination Time: 8 hrs

Ingredients:

Wheat flour/Atta- 1 cup
Jaggery-  50 g or as needed
Baking Soda- a pinch
Cardamom Powder- 1 tsp
Baby banana- 2
Salt- 2 pinch
Oil for frying

Procedure:

1. Prepare all the ingredients. Add jaggery and half cup of water to a sauce pan and switch on the flame. Cook for two minutes until the jaggery is melted completely. Strain this mixture to remove the impurities from jaggery. Allow it to cool.



2. Grind banana with melted jaggery in a mixer grinder. (Or else you can add the banana directly to the dough and combine it well. Both the method will give you the same results).


3. In a bowl add wheat flour, salt and baking soda and mix well.


4. Add the ground puree and prepare a very soft sticky dough.




5. Allow the dough to rest for 8 hours.


6. In a kadai add oil. The flame should be very low or medium to low. Make small balls with wet hand and drop it in the oil. Fry till golden brown.

7. Serve hot with a cup of tea.
