Brinjal Fry Masala / Kathirikkai Kootu



Brinjal fry kootu is a simple and tasty side dish. You can use eggplant also but this taste more delicious with brinjal. Tamarind tangy flavor along with fried brinjals taste makes this one a nice combination for white rice. Try it and see .


Preparation Time: 10 mins
Cooking Time: 15-20 mins

Ingredients:

Brinjals- 2
Onion- 1
Tomato- 1 small
Curry leaves- few
Tamarind- lemon size ( soak in little amount of water)
Mustard seeds- 1 tsp
Ginger garlic paste- 1 tsp
Turmeric powder- 1/2 tsp
Chili powder- 1 tsp
Fennel powder- 2 tsp
Salt to taste
Oil- 2 tbsp

For Masala( frying):

Turmeric powder- 1/2 tsp
Chilli powder- 2-3 tsp
Cumin poeder- 1 tsp
Oil- 3 tbsp
Salt- as needed

Procedure:

1. Mix brinjals with the ingredients given under masala for frying and keep aside for 10 mins. Meanwhile prepare other ingredients.



2. Heat oil in a kadai and shallow fry the brinjals and keep aside.



3. Heat oil in a kadai and add the tempering ingredients one by one ( mustard seed and curry leaves).


4. Add the sliced onions and saute well. Add ginger garlic paste and mix well. Now add tomato and saute well till it becomes mushy.


5. Add all the spice powders along with salt and mix well.


6. Add the tamarind soaked water and allow it to boil.


7. Add the fried brinjals and mix gently without breaking them. Cover and simmer cook for 7 to 10 mins.


Tasty brinjal fry side dish is ready to serve.
