Spicy Chicken Zucchini Pasta



I have already shared a similar zucchini recipe but this is quite different in taste from that. This recipe is spicy and more of a curry touch. If you are on a ketogenic diet then you can have this food as a breakfast or a supper. A different recipe so hope you will try it and share your feedback.

Cheesy Chicken Zoodles

Preparation Time: 10 mins
Cooking Time: 20 mins
Serves: 3

Ingredients:

Zucchini- 3 medium size
Boneless chicken- 250 g
Egg - 2
Tomatoes- 2 
Onion- 1/2
Garlic pods- 2
Dry red chilli- 3
Pepper corns- 1 tsp
Salt to taste
Oil- 3 tbsp

Procedure:

1. Using a peeler or spiralizer slice the zucchini into thin strips like spaghetti.



 2. Chop the boneless chicken into small pieces. Heat a kadai and add the oil. Add the chicken pieces and saute for some time till its cooked ( boneless chicken will get easily cooked by this way).


 3. Grind the tomatoes, onion, chilli, garlic and pepper to a fine paste.



4. After the chicken is cooked add the eggs and scramble it. Now remove them from the kadai and keep aside.


5. Add the grounded paste to the kadai and saute till the raw smell leaves.


6. Add the zucchini to it and mix well. It will ooze out water so not necessary to add water.
                                             

7.  Now cover and cook till its 3/4 done. Don't overcook else it will turn very soft. I prefer it to be little crunchy but if want it to be soft then cook accordingly.



8. Add the cooked chicken pieces and egg mixture to the zucchini and stir well. Add salt and mix them all together.


9. Spicy chicken zucchini noodles is ready..
