Rasmalai (Using Milk Powder and Egg)


Rasmalai is a Bengali delicacy that is very popular among the Indian sweet lovers. It is usually made with paneer, shaped into flattened balls and cooked in thickened milk. Here is an easy and quick rasmalai recipe made with milk powder flavored with cardamom and pistachios.

Preparation  Time: 15 mins
Cooking Time : 30 mins

Ingredients:

For balls:

Milk powder- 1 cup
Egg- 1
Baking powder- 1/2 tsp
Oil- 2 tsp
Plain flour- 1/2 tsp
Cardamom powder- a pinch

 For Rabri:

Milk- 1 litre
Sugar- 6-8 tbsp
Cardamom powder- a pinch
pistachios- 2 tbsp

Procedure:

1. Boil the milk with sugar and cardamom powder over medium heat.


2. Meanwhile, take a bowl and sift the milk powder with the baking powder and flour.

3. Add a small pinch of cardamom powder and oil. Mix gently with hands.

4. Now add the lightly beaten egg and mix to form a soft and slightly sticky mixture. Knead lightly to make a smooth dough. Don't knead too much. Set it aside for a minute.


 5. Make equal sized small balls and flatten them slightly.  


6. Place the balls, one by one into the milk.

7. Cover the pan and cook on medium heat untill the milk comes to a boil and the balls start to increase in size.

8. Add chopped pistachios.


9. Reduce the heat to low and simmer for few minutes untill the balls are soft and light.


10. Refrigerate and serve chilled.
