Stove Top Chicken Pizza / Chicken Pizza with Homemade Base / No yeast pizza


One day I was craving badly to have pizza. Bored of buying outside and also its quite expensive too. So I thought of preparing a homemade pizza. Searched for the base recipe. It asked for Yeast or Baking powder. I didn't have any of these things. So I tried to make my own recipe for base and guess what?? It was no different than a pizza which we buy from shops. The base was so soft and my hubby loved it. From that day on, we don't buy pizzas from outside that often. Usually kids love pizzas. But we always worry for their health. If you make it homemade then there is no guilt in giving them right? You can replace it with wheat flour and include different kind of veggies in it and make it healthier too .

Preparation Time: 10 mins
Cooking Time: 20 mins
Size: Medium sized pizza

Ingredients:

For Chicken:

Chicken- 100 gm boneless bite sized piece
Chicken 65 masala- 1 tsp
Salt as taste

For Toppings:

Cream cheese or Mayonnaise- as needed to spread(optional)
Ketchup or Pizza Sauce- as needed to spread
Capsicum- few thin slices
Onion- 1 sliced thinly
Tomato- 1 sliced thinly
Mozzarella Cheese grated as needed
Oregano- 1 tsp(optional)


For Base:

All Purpose Flour/Maida- 1.5 cup
Curd or ButterMilk- 1 cup or as the dough requires
Sugar- 1/4 tsp
Salt- 1/2 tsp
Baking Soda- 1/4 tsp
Baking powder- 1/4 tsp (optional)

Procedure:

1.  Marinate the boneless chicken with the chicken 65 masala or with any kind of spice powders you like. These are the ingredients needed for this recipe.


2. Chop the veggies thinly.


3. For making the base, Take the flour in a bowl, add salt, sugar, baking powder and baking soda. Mix it well.


4. Pour the curd or buttermilk in it and make it into a dough. It should not be too watery or too hard.


5. Rest the dough for 30 mins to 1 hour.


6. Take the marinated chicken in a pan and switch on the flame. It begins to ooze out water. Let the chicken cook for few minutes. Finally add little oil if you want and cook for few more minutes.



7. After the dough rested for an hour, Sprinkle some flour on it and knead again to a soft dough. Roll to a thick roti.



8. Take a non-stick frying pan, switch on the flame to medium. Place the rolled dough on it. Cover and cook for a minute.



9. When you could see small bubbles on top, Flip it to other side.


10. Reduce the heat to Low. Now, Spread the cream cheese or Mayonnaise on it. Then add some ketchup on it and spread over the cream cheese layer.



11. First sprinkle little mozzarella cheese on it. Then add the onions, tomato and capsicum all over it. Now add the cooked chicken pieces. If you want sprinkle some oregano also.


12. Sprinkle the mozzarella cheese over it.


13. Cover it with a lid and cook for 5 mins. Do not increase the heat.


13. Check whether the cheese has melted completely. This means that the pizza is ready to serve.


14. Transfer it to a plate.


Slice it and serve it hot.


Notes:

1. Resting of the dough gives softness to the base.
2. Roll the base to a thick roti. If you make it thin, then reduce the cooking time for the pizza. Orelse the base will become hard.
3. Sprinkling a little of mozzarella cheese at the beginning is important. Because this makes the toppings to stick to the base.
4. You can even use milk for the dough.
