Aatu kaal Soup/ Mutton Leg Soup
Mutton leg soup or Aatu kaal Soup is nothing but the soup of the Lamb legs. Please make sure the legs are well cleaned and are smoked. Here in hypermarkets we get cleaned lamb legs. But they are not smoked. So what I do is, I just show the piece of lamb leg in the stove one by one holding it with a skewer or knife. So that you get a smoked effect. Its totally optional but I recommend you to follow this step. Since this smoked flavor is irresistible. The mutton leg's are rich in calcium and protein. Rabri / Sweet Rabri / Rabdi
Rabri is prepared using full fat milk. It is nothing but reduced milk with sweetness and nuts. It is a rich dessert that enlightens your mood when you eat it. Normally we dont eat this often due to its high calories. But for a family get together or on special occasions this is a best dessert to go with. It tastes best when refrigerated. You can adjust the thickness of the rabri as per your taste. This is the base for Rasmalai and Shahi Tukda. If you don't have condensed milk, then you can skip it and increase the sugar quantity. But I personally recommend you to use condensed milk since it gives more richness to the dessert.

Potato Roast Semi Gravy
A perfect and easy side dish for chappathi. When you are lazy and you want something quick and easy to be made along with chappathis or pooris you can go for this as it takes less time to prepare. Most of us like potatoes especially when it is fried than the boiled ones. In this recipe the potatoes are fried and add to the curry so it tastes more good. Fried Rice
Fried Rice is the fashioned version of including veggies in your diet. Sometimes when you prepare variety of vegetable kootu in your lunch, kids wont even touch it. But when you prepare fried rice, they love it. You can include whatever veggies you wish or some pieces of fried chicken and it tastes awesome. The key to a successful fried rice is the perfectly cooked rice. When the rice is 3/4th cooked, take a rice and cut it into half. If you could see the raw white rice in the middle, then its not cooked. Wait for 1 minute and check again. Repeat this until the moment you could find no raw white rice. That is the right time to switch off the flame. If you want a perfectly prepared fried rice, Please do not over cook the rice.

Potato Kootu / Potato Poriyal
This potato side dish makes me nostalgic. My mother used to prepare this for lunch during my school days. Along with plain rice and rasam this side dish will be most of the combo. I too liked it soo much. My mom used to tell that she had kept this kootu for lunch so that i'll be happy. Because i don't like to eat rice at school instead tiffin will be better. But the school order was to bring rice for lunch, so I had no other go. Rice with rasam will be dry when opening the tiffin box during lunch hour but this kootu will be fresh so definitely my first bite will be this tasty side dish. Very easy to prepare this so give a try .

Mutton Kappa Briyani is a fabulous kerala cuisine. I really wanted to try something different with tapioca so i opted this tasty briyani and it turned out awesome. Semiya Mutton Briyani / Vermicelli Mutton Biryani
Usually we make briyani with rice. This is a recipe where we use semiya instead of rice. You can make this recipe using mutton or chicken. I have used roasted semiya for this recipe. If you don't have that, then just add a tbsp of ghee in a pan and roast the semiya till the color turns light brown. If you have left over mutton curry then it is a very easy one to make. Ratio for semiya and water is 1:1.5. You can adjust the measures according to the amount of gravy you use for cooking .

Well, when you make Idiyappam you sort of need more gravy with it. To overcome the problem instead of adding water, we add the coconut milk. The addition of coconut milk not only increases the quantity but also the taste. As a result it increases the intake of idiyappam also.. ha ha .
